What to Expect
An oxymel is one of the oldest and friendliest preparations in the herbal tradition ā honey and vinegar steeped with herbs, the name coming from the Greek for "acid and honey." It's sweet, tart, and aromatic all at once, which makes it the rare herbal preparation people actually look forward to taking. No alcohol, no bitter aftertaste, and it keeps for months in the pantry.
In this workshop you'll blend and jar your choice of one oxymel, built on raw honey and live apple cider vinegar. We'll cover why that pairing pulls more out of an herb than either one alone, how to pick good honey and vinegar, how long to steep and whether to strain, and the dozens of ways to use them ā by the spoonful, whisked into a vinaigrette, stirred into tea or seltzer, brushed on meat near the end of cooking, or built into a shrub.
What You'll Make One jar of Oxymel with a choice of ā floral and warmly spiced, lovely stirred into sparkling water or drizzled over fruit ā bright, resinous, and citrusy; our favorite in a vinaigrette or over roasted vegetables ā sweet and anise-y, a soothing after-dinner sipper
