Why Grass-Fed Beef Cooks Differently
100% grass-fed beef has significantly less fat than grain-fed beef — and fat is what keeps meat moist during cooking. This means grass-fed burgers cook 20–30% faster, need lower heat, and will dry out quickly if overcooked. Aim for medium-rare to medium (130–145°F). A meat thermometer is your best friend.

Rest the meat
Remove ground beef from the refrigerator 20–30 minutes before cooking. Bringing grass-fed beef closer to room temperature helps it cook evenly and stay juicy.

Form the patties
Divide beef into 4 equal portions (about 4 oz each). Gently form into patties about ¾ inch thick. Do not overwork the meat — handle it as little as possible to keep the texture tender. Press a small indent in the center of each patty with your thumb to prevent puffing.

Season generously
Season both sides liberally with salt and pepper just before cooking. Do not salt ahead of time as it draws out moisture.

Preheat your pan
Heat a cast iron skillet or heavy-bottomed pan over MEDIUM heat — not high. This is the most important step for grass-fed beef. High heat will dry it out fast. Add tallow or butter and let it melt.

Cook the burgers
Place patties in the pan. Cook for 3–4 minutes on the first side without pressing or moving them. Flip once. Cook another 3 minutes for medium-rare (130–135°F) or 4 minutes for medium (140–145°F). Grass-fed beef cooks 20–30% faster than conventional beef — use a thermometer.

Rest before serving
Remove burgers from heat and let rest on a plate for 3–5 minutes before serving. This lets the juices redistribute. Do not skip this step — resting is even more important with lean grass-fed beef.
